Happy Holi Guys …..Today I am sharing with you the easiest and simplest recipe for a Indian dessert “Kalakand”. Back in India people rely on Mithai Store (Dessert store) to buy it . You heard me right, its way too easy to make at home and needs basically just two ingredients ….Don’t be awestruck..Its true.
In India festivals are all about eating and meeting family n friends. Its so convenient back there to just walk into any Mithai store and choose from 1000 different varieties of Indian sweets mainly called Mithai … but I crave that real taste and authenticity here in North America. So what’s better – taking things in my own control and get into the kitchen and make some delicious bite size pieces of one of my favorite Mithai – Kalakand.
I might be a bit delayed in posting this recipe blog for delicious Kalakand. Earlier I was thinking that this could be a great recipe that I could suggest you guys for Holi , but sorry …just got a bit lazy and the wine from last nite just made me sleep for long hour this morning :). We still have a day left and as I mentioned its super simple , so if you still haven’t decided what to make for dessert for Holi , you just hit a jackpot 🙂
Opps I totally forgot, for those who aren’t aware of what Holi is , its the festival of colors celebrated in India. Its mainly a two day festival , the first day at night there is a huge bon-fire set “Holika Dehen” and people pray . (There is a long story behind it , but I not going to elaborate that here ..we all are google gurus) The second day is when people meet their close relatives, neighbors and frens and greet them offering sweets and by apply colors on each other’s body/clothes (it can get messy, but its super fun ) .
So getting into today’s post , the main ingredient that is being used is Ricotta Cheese, use higher fat version as skim and fat free might not work . Ricotta is an Italian cheese and is easily available in your grocery store in cheese section. I am not sure if its easily available in India, but you guys needed worry ,you have so many dessert store out there 🙂 . Also this recipe is fully prepared in microwave, so that’s that, I personally haven’t tried on stove, so really wont be able to suggest options for this one.
I have made Kalakand many a time and even took it for my office colleagues and looking at their happy faces after eating it, I knew they loved it.
So guys give it a shot and I hope you like it as much as I do (already ate 5 pieces and stopping myself from getting the 6th 😉 )
Rich and delicious Indian Milk dessert , that you can make at home with two simple ingredients
- 500 ml Sweetened Condensed Milk
- 600 gm Ricotta Cheese see notes
- 1 teaspoon Cardamom Powder
- 5-6 pieces Almonds Shavings for garnishing
Try and use the full fat version of Ricotta cheese or as high fat version you find in your local store. Fat free versions will not give you the same results as it would turn too watery
Take a microwave safe bowl or dish, preferably use square as we would let the final product set in the same dish/bowl and cutting same size pieces is easier in squared shape. Add the ingredients, Cheese ,condensed milk and cardamom to the dish/bowl
Stir the mixture with a spoon and put it in the microwave for 5 mins with top covered
We are now going to cook this in intervals of 2-5 mins in the microwave uncovered, until all the liquid evaporates .
Make sure to keep stirring in between to ensure the mixture doesn't stick to the sides or the bottom . It took me a total of 29 mins to get to the final stage . The intervals in mins for which I cooked the mixture ,were 5-5-5-2-3-2-2-5.See notes for more details
Once all the liquid get evaporated, and the cheese mixture looks a bit grainier, stop cooking and spread the mix evenly in the same bowl/dish or transfer into the square dish for setting it up. Press the mixture down a bit to help it take the shape . Add the almond shavings on top to garnish and let it cool down on the kitchen counter and then in refrigerator for few hours
Once ready to serve, cut it into pieces of desired size . I made 20
1) Ricotta is a kind of Italian cheese made from goat, cow or buffalo's milk. Its easily available in the cheese section of the local markets
2) Try and use a square microwave safe pan for cooking and setting the final product as that makes cutting the pieces into same shape easier and it will look more uniform
3) Every microwaves' setting is different and the time to get to the final product depends on that as well as the variety of the ingredients you use, especially the Ricotta Cheese (how much moisture that variety has etc.). So don't worry if your final product took more or less time than that mentioned in the recipe
